Watercress Pesto

 

2 to 3 cups watercress leaves

1/2 cup extra virgin olive oil

2 tablespoons macadamia or pine nuts

1 to 2 cloves garlic

salt and pepper to taste

 

Place the watercress, oil, nuts and garlic in a blender and blend until smooth

and bright green. Season to taste with salt and pepper.
