Do it gradually, what's the rush. Get used to your new lifestyle. However, I am considering going vegeterian. Recently I accepted a challenge to eat only vegan for 1 month.. I admit it was a real challenge but I made throught the 30 days. I read alot of labels and found out that even items from the freezer case that claim they are a simple veggie don't always measure up upon close scrutiny. Also I found it difficult to find recipes for vegans. I don't think being a vegan is for me. Being a vegeterian would probably suit me better as it is not as strict. Actually, there are so many you'll probably never be able to read them all. I'm always finding new ideas there. We're still " transitioning " here, my family isn't as interested in going totally veg as I am, that's ok, they ARE willing to try new recipes as long as they're tasty and flavorful! As you taper off dairy slowly the less you will miss it. Find some of the recipes in the file to help you. Go to the sauce folder and try the ranch recipe I posted and the savory sauce. I serve these and no one can believe they aren't dairy. My nephew lived on burgers, pizza and cheese. He had a hard time at first with vegetarianism, I had to make him a double decker v eg burger with 3 slices of veg cheese. Slowly he stopped eating boxes of veg burgers each day, I saw he wasn't using much veg cheese. Now he is vegan and cooks from our files, he creates some great recipes too, but I have a hard time getting him to post them. I would say it took him about a year from going vegetarian to vegan and that's been about 4 years now. Guest guest Posted April 5, 2009 Report Share Posted April 5, 2009 I found the savory sauce but couldn't locate the ranch recipe (?). I have premade burgers and " chik " style patties in the freezer (hubby will eat these if I make them up for him) but am going to try making my own (black bean etc - tried one with chick peas that was pretty good). One of the things that's been tough for me is that I have always been the type of cook who just throws things together, so learning to use ingredients in a different way (plus no meat and adding new (to me) things like nutritional yeast etc) and techniques that are new to me means I have to read the recipe and have the time to do it. Coming up with combos of ingredients off the top of my head doesn't come easily to me (except for stir fry over rice type dishes) so I have to plan ahead. Many of the dishes I've tried in vegetarian restaurants always have new and different flavors to them, and that's one of the things I want to be able to create more readily (eventually)!
