Guest guest Posted August 1, 2009 Report Share Posted August 1, 2009 No problem Elaine... just a note that these can be made with 100% wheat flour or any flour of your choice. I plan to expirement with some more bean flours to see what happens. 1 1/2 cup whole wheat flour 1/4 cup soy flour 1/4 unbleached all purpose flour 1/2 tsp sea salt 1/4 cup olive oil (I prefer the light tasting one for this recipe) 1 tsp baking powder 3/4 cup warm water *2 damp clean tea towels *Additional Butter or oil for finishing 1.Sift flours, salt, baking powder into a large bowl. 2.Add oil and water and work until a sticky ball forms. 3.Wrap dough ball in plastic wrap and let rest for 30 min. 4.Divide dough into six to eight balls, and cover with a moist cloth. 5.Dust counter or pastry board with flour and roll into a circle that is about 1/4 inch thick ( We make ours a little thinner) 6.Heat dry griddle on high heat for 3-5 min. 7.Place tortilla on dry griddle and cook 30 seconds on each side. 8.Remove from griddle and butter or lightly oil and wrap in a damp tea towel to keep warm. These freeze really well and are great for making pizzas, wraps, enchilladas and quesadillas. The kids love them with nutbutter and jelly I like mine with fruit and honey as a sweet snack. We normally tag team to make these (One rolls, one cooks and one butters) but if you are cooking by yourself then I would suggest dusting the uncooked tortillas with flour before stacking them on top of each other to keep them from sticking together and keeping the butter or oil next to the stove so you can butter one side after you flip it.
