Guest guest Posted July 31, 2009 Report Share Posted July 31, 2009 There is a nice pizza place a few towns over that uses great fresh ingredients to make one of the best pizzas ever and we go there every Friday night for our " family date " . I have cut yeast from my diet which I thought meant no pizza. The past few months have been miserable as I watch the fam wolfing down their yummy, cheesy pizza and I get to enjoy a salad. I talked to the owner Walter tonight and asked if he could think of an alternative, and after a moment he told me that he had an idea. He put all of my favorite toppings in a small pan (cherry tomatoes, red onions, yellow peppers, spinach, broccoli and mushrooms) with some marinara, fresh basil, cheese and baked it. What came out was a delicious- almost casserole type dish that he called " Crust-less Pizza " . There you go, Necessity is indeed, the mother of Invention. Next week I am making some whole wheat tortillas and bringing them with me to sop up all the yummy juices. In the meantime, I hope that Walter's ingenuity may help some other pizza depraved person out there. I am going to sleep happy tonight.
