Guest guest Posted July 6, 2009 Report Share Posted July 6, 2009 I rinse the dried beans and then add to a pressure cooker pot. Cover with about 3 times the amount of water as beans. Put on the lid and tighten. Put on a burner and heat on high until it comes to a boil, which you can tell by a hissing sound. Turn the burner down to low and cook for 5 minutes. Leave the pot on the burner and turn off the heat. Let soak for 30 minutes to an hour on the same burner. Open the pressure cooker and add a tsp of oil. Close the pot to seal again. Turn the burner back on high and bring back to a boil(listen for a hissing sound). Turn burner down to med. low and cook for about 20 minutes - 30 minutes. Put your pot in the sink and run cold water over it, until you hear the release. Remove lid and check to beans for tenderness. Add salt and seasonings to taste. I like to saute some onions, garlic, celery and carrots until tender crisp and add to the cooked beans. They still have some crunchiness to them, which I enjoy.
