Guest guest Posted June 11, 2009 Report Share Posted June 11, 2009 This is one of my favorite recipes. I make it a lot and take it to work for lunch. Fast to prepare! Contains cheese... Serves 2 (big portions) 1/2 cup brown rice 1 8 oz. bag frozen shelled edamame (Walmart carries it!) 1/4 cup dried cranberries (I use raisins) 2 oz crumbled Feta 10 pitted kalamata olives, halved 3 Tbs chopped cilantro 1 Tbs olive oil 1 Tbs lime juice (or lemon) 1/4 tsp red pepper flakes Bring 1-1/4 cups water to a boil, stir in rice and season with salt. Cover, reduce heat to med low and simmer 45 mins or until rice is tender. In a hurry? Use the brown rice boil in bags!! Bring 2 cups salted water to a boil , add edamame and cook 2 minutes or until tender; drain and set aside.
