Swiss Chard Pies

 

 

 

1 onion, chopped

 

1 clove garlic, minced

 

2 tablespoons oil

 

1 bunch Swiss chard

 

6 eggs

 

1 cup shredded cheese

 

1 teaspoon salt

 

2 pie crusts

 

 

 

Heat oven to 400 degrees. Brown onion and garlic in oil. Trim and chop chard,

add to pan and cook until wilted. Beat eggs in a bowl; add cheese, salt and

chard and mix. Pour into pie shells and bake 30 to 40 minutes.

 

Makes 2 pies.

I ended up doing it from memory, sort of...

 

I sauteed onions, garlic & Swiss chard.

 

I used fake eggs, 1/2 cup skim milk, & 1 up of fake shredded cheese.

 

Also added:

 

1 tbl crushed fennel seeds

2 tsp honey

juice of 1/4 fresh lemon

1/4 tsp dried crushed chili pepper

3 bunches of fresh spinach, shredded into quarter size bits

 

Sprinkled the top with Italian whole grain bread crumbs and baked with only one

crust.

 

So this would technically be quiche? Or one crust pie?
