Guest guest Posted February 12, 2009 Report Share Posted February 12, 2009 Swiss Chard Pies 1 onion, chopped 1 clove garlic, minced 2 tablespoons oil 1 bunch Swiss chard 6 eggs 1 cup shredded cheese 1 teaspoon salt 2 pie crusts Heat oven to 400 degrees. Brown onion and garlic in oil. Trim and chop chard, add to pan and cook until wilted. Beat eggs in a bowl; add cheese, salt and chard and mix. Pour into pie shells and bake 30 to 40 minutes. I used fake eggs, 1/2 cup skim milk, & 1 up of fake shredded cheese. Also added: 1 tbl crushed fennel seeds 2 tsp honey juice of 1/4 fresh lemon 1/4 tsp dried crushed chili pepper 3 bunches of fresh spinach, shredded into quarter size bits Sprinkled the top with Italian whole grain bread crumbs and baked with only one crust.
