I looked in the file, and I found a couple of recipes that I can 'get away' with. It seems that a lot of the recipes are too different for our first exposure to this type of greens. You see, none of us have ever eaten them before. Only two of the six of us are vegetarian, so if the recipe is too unusual they won't even give them a chance. I also like them raw, but sparingly, in salads. Guest guest Posted February 17, 2009 Report Share Posted February 17, 2009 I like baby chard raw too. I'm under the impression you have to cook collard? So I haven't tried that one yet. I might maybe be able to make myself eat a VERY slightly sauteed baby spinach since I've eaten it in lasagna and under brown rice, both of which wilt it a bit. As long as I'm eating some greenery raw, I'm not in any great hurry to make myself learn to eat it cooked. And I LOVE raw carrot, tolerate barely-stirfried carrot strips, and detest any more-cooked carrot, both for texture and flavor-change reasons.
