Guest guest Posted April 15, 2009 Report Share Posted April 15, 2009 Asparagus With Tomato Sauce 2 pounds asparagus spears 2 tablespoons butter 1/2 cup mushroom, sliced 16 ounces tomato sauce 2 tablespoons green onions, chopped 1/4 teaspoon basil 1/2 cup Parmesan cheese, grated Trim off the tough ends of asparagus spears; remove the scales with a knife. Place in a pot and cook, covered, in boiling water for 6 to 8 minutes or until tender-crisp; drain. Arrange in a lightly greased 9\ " baking dish. In a saucepan melt butter; add sliced mushrooms and saute 2 to 3 minutes. Stir in tomato sauce, chopped green onions, and basil; simmer for 10 minutes. Spoon the sauce over the asparagus then sprinkle with Parmesan cheese. Broil 2 to 3 inches from the heat for 3 minutes or until lightly browned.
