Guest guest Posted July 13, 2009 Report Share Posted July 13, 2009 Black Bean and Corn Salad .. 2 14 oz. cans black beans, drained and rinsed .. 1 lb. Frozen corn, thawed .. 1/2 c. minced red onion .. 1/2 c. finely chopped green onion .. 2 c. chopped ripe tomatoes .. 1 bunch fresh cilantro .. 2/3 c. fresh squeezed lime juice .. 1/2 tsp. salt .. 1/2 tsp. medium-ground black pepper .. 1/3 c. light olive oil Combine beans, corn, and onion in a mixing bowl. In a separate bowl combine lime, salt, pepper, and olive oil. Clean the cilantro and remove any leaves that do not look fresh. Set aside 15 to 20 sprigs of cilantro for garnish. Finely chop remaining cilantro and add 1/2 c. to dressing mixture. Whisk dressing and add to salad, toss well, then add tomatoes and gently mix in. Make in advance and refrigerate overnight.
