If you want you can just throw your washed tomatoes into bags and freeze

with the skins on and remove the skins when they thaw out as slick as you can

by scalding them before freezing. At least that is what I have been told

-- I scald, remove skin and can. I have a 21cuft freezer but it seems to

be full all the time.

YES! That's what I'm most excited about, tomato soup with cream and fresh

basil! :) I don't mind the seeds, either, but I do NOT like tomato skins in

soups. My mom always used to do that, and they curl up and make those

funny-looking little spears that stick in your teeth... ick! So I throw them

in boiling water and take the skins off before I freeze them. I have a roma

tomato plant in my mom's yard that should be producing in a month or so...

I'm looking forward to stocking up on frozen romas for soup this winter! :)
