I feel better about eating all veggies and want some new ideas about this topic. Thanks This one is real good!! I got it from a mom at the organic coop that I am apart of. 1 large butternut squash peeled and seeded and cubed 2 large onions cut into wedges 1 lb red potatoes peeled and quartered 1/2 lb carrots, peeled and cut 6 cups stock Place all veggies on parchment lined baking sheet. Drixle with oil and sprinkle with salt and pepper. bake at 400 degrees for 45 min to 1 hour until tender. place cooked veggies in a stock pot and cover with 6 cups of veggie stock (use what ever stock you want, you can even use water) Bring to simmer and allow it to simmer for as long as you wish just to blend the flavors. Blend in a blender works best to puree it. If you want you can add 1 cup or more cream.
