Once you get the hang of a pressure cooker and start working with one on a regular basis you will wonder how you got along without it. I make bean soup in 45 minutes. Potato soup in a flash. Guest guest Posted June 16, 2009 Report Share Posted June 16, 2009 I have to agree that once you use a pressure cooker or a pressure canner, you will wonder how you got along without one. All you have to do is to PAY ATTENTION to how to use it, PAY ATTENTION to the rules of safety when you do use it. READ the directions well and then follow the directions......to a T. I have been using a pressure cooker and a pressure canner for about 36 years now. I canned 13 pints and 3 quarts of fresh pinto beans last week...... I can't tell you how easy it was to can them. It took me longer to shell the darn things' (6 hours) then it took to pressure can two loads...one of pints (40 minutes) and 1 of quarts (50 minutes). And fresh canned pintos tastes are so much better tasting than ones that have been dried, soaked and cooked. And, now we have tomatoes getting ripe.......yea!! And, if you have a pressure canner, and make an extra batch of tomato soup or black bean chili or whatever, you can then can the rest of it in no time.....homemade tomato sauce....so much better tasting than store bought. I have two pressure canners and three pressure cookers. I can't help myself when I see one at an estate or garage sale.....I buy it if it is in good shape and has been taken care of. I found a pressure canner at the Goodwill for $5.99 one time....in the original box w/ the directions, looked brand new and just put it up knowing that someday one of my daughters would be wanting one .....and my oldest daughter was the smart girl this time. It would have cost around $45 to $50 new and she got it for free!! If you are ever pressed for cooking time, you will love having a pressure cooker....they are as safe as slow cookers but much faster.....LOL!!...pun intended. Nancy C. There is very little oxidation with pressure-cooked foods, and so nutrients are preserved much better than, for example, boiling in water and then discarding the water. Moisture and flavour are sealed in. It is safe, quick (quicker than a microwave oven) and affordable. I have two pressure canners and three pressure cookers. **I also have three pressure cookers, apart from my two solar ovens, which do the bulk of the cooking in my household. Guest guest Posted June 17, 2009 Report Share Posted June 17, 2009 I love my pressure cooker. I got one of those digital ones where, when programmed, it will turn on and off automatically. So I can be at work and it will turn on when I'm not there and shut off when it's done. Has anyone cooked beans in a digital pressure cooker?
