Last night I made a tofu dish, trying to imitate Thai cooking: stir fried tofu, onions, chiles (rocotos/manzanos), carrots, celery, broccoli, chopped pineapple, ginger, garlic, tumeric, some Frank's Louisiana hot sauce for salt, then some light coconut milk, but it just didn't seem right until I added an anchovy and then some fish sauce (before and after the coco milk, actually) I really started out to do a vegetarian dish. I didn't want to use soy sauce. Is there a good substitute for fish sauce and/or anchovy? I know I could google it, and probably will, but would like some first hand suggestions.
