The first one I was expecting to taste weird, like chalk or something. Instead, after mixing in a little salt and sweetening, I had milk that was lick-the-spoon good! I'm really surprised at how good the fresh soy (and some other!) bean milks taste. I've been tweaking the recipe for lentil-oat-milk (LOM) and it makes the best and easiest yogurt of any kind I've tasted, makes great puddings too, naturally not-fat, less than 100 kcal and seven cents for a big 1/3 quart serving that is gone in less than... but that's another story. One thing you should expect, though, making the soy milk like this, when you get down to the bottom of the jug there will be about an inch or maybe more of fine okara sediment, like silt or white mud. It will feel like there is a lot left in the jug when in reality you're just about out of milk! I wash it out in the garden and it composts well around some of my favorite plants. They love it!
