Guest guest Posted June 19, 2009 Report Share Posted June 19, 2009 Steamed New Potatoes with Mint and Parsley 1 1/2 lbs. small red potatoes, quartered lengthwise 1 tbsp. plus 1 tsp. fresh mint leaves, minced 1 tbsp. plus 1 tsp. fresh parsley, minced 2 tbsps. unsalted butter 2 tbs[s. sour cream 1/4 tsp. salt (optional), or to taste In a steamer basket over boiling water steam potatoes, covered, for 10 to 12 minutes, or until just tender. While potatoes are steaming, in a bowl stir together mint, parsley, butter, sour cream, and salt and pepper to taste. Add the potatoes to herb mixture and toss well.
