THEY WERE A HIT! And I have to say, this could make me a big zucchini fan. I loved it. Every day now they wait to see what zucchini recipe I'll bring in. Do you believe that there were people there who never had Zucchini bread? I thought everyone in the world had had Zucchine bread! Giselle P.S. This is the recipe I used: Mock Crab Cakes 2 cup zucchini -- grated 1 cup seasoned bread crumbs 1 teaspoon seafood seasoning (I used Old Bay) 1 egg 1 tablespoon butter or margarine Mix all together well. Has anyone come up with a good calorie count on them, btw? The recipe I had had 600+ calories but it didn't give a serving size. I don't know if they taste like crab cakes having never eaten crab. They were pretty good. I liked my first batch better - they were crispier. I undercooked the second batch a bit and I didn't like them nearly as well. Paula , " G.
