Guest guest Posted May 20, 2009 Report Share Posted May 20, 2009 This is wonderful as a lettuce wrap or a pita stuffer and for some reason it really does remind you of tuna salad. This is another one from my " Lean and Luscious Meatless " cookbook. I could eat this ever single day. Really doesn't taste like tuna, if you want the ocean flavor add some kelp power and a dash of Old Bay Seasoning. Donna Counterfeit Tuna Salad 2 cups finely shredded carrots 1/2 small onion grated (about a heaping tblspn.) 1/2 cup finely chopped celery 2 Tblspns. sweet pickle relish 1 Tblspn. lemon juice 1/4 cup mayo or vegan mayo of your choice salt & pepper to taste In a medium bowl combine carrots, onion, celery and relish. In a small bowl combine remaining ingredients and mix well. Add to carrot mixture, mixing well. Chill several hours to blend flavors. Note: If you have kelp powder toss a sprinkle in, but it's not necessary. Serves 4 79 calories per serving. Barn's burnt down ....... now I can see the moon.
