Guest guest Posted May 20, 2009 Report Share Posted May 20, 2009 " Nutty Carrot Sandwiches " 3 large carrots, coarsely shredded 2/3 cup raw pecans, finely ground 1 small garlic clove, minced 4 stuffed green olives, minced Vegenaise or mayo of your choice 16 whole basil leaves (or spinach leaves work well too) 8 slices of bread (I love 7 grain bread with this) In a medium bowl combine carrots, olives, pecans and garlic with enough mayo to moisten well and hold ingredients together. Spread bread with a light coating of mayo, spoon carrot mixture on 4 bread slices. Arrange basil leaves over carrot mixture and top with bread. Cut sandwiches in half vertically or in quarters and enjoy!!!!! Barn's burnt down ....... now I can see the moon.
