cooking in hot weather

Totally understand about the heat....it was 96 here yesterday and we have a high

humidity index that makes it feel like it is about 7 degrees higher....east

Texas in

the summer is no fun.

 

When I mentioned cooked foods, I was not necessarily

talking about heating your kitchen up by turning on the oven. There is always

the microwave in which to cook vegetables like broccoli (which I do not like

raw at all) or other vegetables.....there is always that old stand-by wok for a

quick

stir fry (which we really love), grilling eggplant (another vegetable you will

not

catch me eating raw) with a little olive oil and a sprinkle of basil is so

good....

corn is good grilled, tomatoes.....we loved grilled vegetables and there

actually

are top of the stove top ovens.....mainly vintage ones, that do not heat up the

kitchen but will bake for you....like cornbread or muffins. And you can always

bake potatoes in the microwave or in a stove-top oven and then stuff them with

whatever is your favorite.....broccoli with homemade cheese sauce is one of

mine.

Crockpots are also good for cooking in summer as are indoor counter-top

rotisseries-

grills.

 

One of our favorite summer time meals is a pot of well seasoned pinto beans,

fried

okra, corn on the cob, fresh, cold sliced tomatoes and cucumber, cornbread (and

I make

my cornbread with fresh ground cornmeal and freshly ground hard white wheat),

then

cantaloupe and strawberries with a spoon of homemade yogurt on top....and a

tall

glass of iced tea with lemon......mmmmm.....mmmmm.....can't be beat! That

makes

summer in east Texas bearable!

It's in the 90's here this week and I have not adjusted yet -- after going

in and out of air conditioning all day (and getting a headache because of

it) I have been eating raw fruit and vegetables, plus a piece of whole wheat

bread with peanut butter for supper. Even if I felt like eating warm food, I

don't think I could stand heating up my oven right now!
