Guest guest Posted April 10, 2009 Report Share Posted April 10, 2009 Root Vegetable Mash 1 1/2 lb. turnip or mixed with rutabagas and potatoes 2 tbsps. olive oil 4 to 5 tbsps. milk or soy milk 1 cup mild cheddar, grated or soy cheese will work 5 tbsps. butter or marg. salt 1 tsp. cracked black pepper Peel and cut turnip into small cubes. Cook in boiling salted water until tender, then drain well. Puree in a food processor with the oil and the milk until smooth. Transfer to a clean pan and heat through. Beat in the cheddar and 2 tbsps. butter. Season with salt to taste. Transfer to a warm serving dish. Melt remaining butter with cracked black pepper. Pour it over the puree and serve right away.
