Judy - Yasmin Dominguez Friday, April 10, 2009 10:06 AM NEW MEMBER Yasmin - & vegetable fried rice Recipe Hi! Am happy to join the group, stopped eating meat 4 years ago, do eat fish, eggs, dairy. Here is a simple vegetable fried rice I like to whip up: 1 cup cooked rice (use your favorite, white or brown) 3 lg mushrooms, sliced 1/2 lg green pepper, sliced thin 1/2 lg onion, diced 2 or 3 baby bok choy, sliced half cup of snow pea pods half cup of bean sprouts 2 or 3 green onions, sliced ponzu sauce to taste 1/2 tsp grated ginger toasted sesame oil Heat oil in frying pan, saute onion, mushrooms, peppers bok choy untill a little tender. Add rice & ponzu sauce- (can use soy sauce if you prefer) and ginger, stir frequently when heated & mixed, toss in snow peas, green onions & bean sprouts saute these too, untill a little tender At this point, you can also throw in a beaten egg, scrambling it in the rice, if you wish.
