Almond butter cookies

I have not made these yet -- but I definitely will! My mom went to a cookie

exchange and then gave me everything with nuts (she can't have them and it

was a great deal for me!) These were great... kind of an easy toffee-type

cookie.

To those of you who asked,

 

 

 

Here is the super easy recipe I used for the cookie exchange:

 

 

 

3 sticks of butter

 

1 cup of brown sugar

 

about 18 graham crackers - whole

 

sliced almonds

 

 

 

Line a large bar pan with heavy duty foil. (I love using my Pampered Chef

bar pan available from Hough or Nunez.) If you don't have one, you can use

a cookie sheet that has edges.

 

 

 

Cover the entire bar pan bottom with graham crackers. Make sure they lay

flat and stay as whole a possible. You can break them into the smaller

rectangles to fill in the edges.

 

 

 

Put the butter and sugar in a saucepan and heat on medium high until it

begins to boil. STIR CONSTANTLY.

 

 

 

Pour butter/sugar concoction over the graham crackers and spread it evenly.

 

 

 

Sprinkle almonds over the top.

 

 

 

Bake at 350 for 6-8 minutes (until the sauce is bubbly). Remove from the

oven and cool for 5 minutes in the pan.

 

 

 

Use a small serving spatula (also available from Paula and Ashley) to cut

along the creases of the graham crackers while they are in the pan.

 

 

 

Lift the entire batch out by the foil and cool completely on a wire rack.
