Black bean and vegetable stirfry

I had made this by accident. All I was going to do was make a regular vegetable

stirfry. My neighbors enjoy it.I do not use the same vegetable everytime except

for onion and broccoli or measure.Keep in mind I am making this for one person.

 

Black bean and vegetable stirfry.

 

Use whatever vegetables you have a little of( use as much and as little as you

like)

Oil( whatever you have in the house) (I used olive oil and used as much as you

like)  

Rice(brown or white and as much as you want)

Black Beans(As much as you want)

soy sauce(prefer lite,and use as much as you want)

 

I prefer a cold skillet when I put in the oil and the vegetables.I cook the

vegetables until soft.As I am cooking the vegetables, cook the rice according to

package.After the the vegetables are cook mix in the soy sauce to vegetables.

Then put in the black beans and let it cook for another 5 minutes to get the soy

sauce flavor in the beans and vegetables.

Serve on a dish of rice while it is hot.

 

If you made too much you can freeze it. It is really good after it was frozen.

Thank you. Not being one who makes dishes without measuring carefully (I was a

chemist in another life LOL!), I like this recipe.

Living alone, I cook as little and as simply as possible. I'll make extra and

freeze so that I can pop in out when I'm tired.
