Guest guest Posted June 7, 2009 Report Share Posted June 7, 2009 Red Lentil and Baby Marrow Dhal Olive oil, for frying 2 large onions, sliced 1 stick cinnamon, broken 4 cardamom pods, bruised 15ml black or yellow mustard seeds 3 garlic cloves, chopped 15ml masala powder 10ml ground coriander 10ml ground cumin 375ml red lentils 2 cups baby marrows, sliced 750ml vegetable stock salt and freshly ground black pepper chopped coriander to serve SERVES 8 Heat a bit of olive oil in a saucepan and fry onion, cinnamon, cardamom and mustard seeds until onion softens. Add garlic and remaining spices, and fry for a further minute. Add remaining ingredients and cook for 15 - 20 minutes until lentils become mushy and baby marrows are tender.
