Guest guest Posted March 10, 2009 Report Share Posted March 10, 2009 Ginger Marsala Fruit Salad 1/4 cup Marsala cooking wine 1 good sized chunk fresh ginger root, grated 1 tablespoon cream cheese 1 tablespoon sour cream 1 15.4 ounce can crushed pineapple, drained 1 good sized granny smith apple, peeled and chopped 1/4 cup dark raisins 1 large banana, sliced, then halved 1 tablespoon flax seed meal crystallized ginger strips, for garnish optional: walnuts, candied cherries In a small saucepan on low heat, simmer 1.5 and ginger about 5 to 7 minutes. Add the vegan sour cream and cream cheese, mix well into the wine mixture. Drain pineapple well and add to pan, turning heat up to simmer well and reduce liquid. Transfer pineapple/wine mix into a bowl , preferably one with a cover and add raisins, apple, flax seed meal and whatever else you want to put in, cover, shake well and chill well.
