Guest guest Posted April 10, 2009 Report Share Posted April 10, 2009 Easy Vegan Chocolate Tapioca Pudding 1 cup tapioca pearls water (as described below) 6 teaspoons cocoa power 10 teaspoons raw sugar 4 teaspoons golden syrup 1 1/2 tablespoons thick coconut cream Place tapioca into a medium sized saucepan, cover the tapioca with cold water to 1cm above pearls. Bring to boil and then simmer until tapioca begins to pearlise. Take off the heat and add cocoa, sugar, golden syrup and coconut cream. Put back on the heat and simmer for 15-20 minutes depending on how you like it. If you want it thinner add more water, if you want it thicker at a little tapioca starch.
