Guest guest Posted June 7, 2009 Report Share Posted June 7, 2009 Greek Baked Ziti (Vegan) ====================== 1 box of whole wheat Ziti 2 lbs of pressed firm tofu (optional 1/2 cup raw cashews pulverized) 1/4 cup corn starch 1.5 tsp garlic powder 1.5 tsp salt ..5 tsp basil 1/2 bag of frozen chopped spinach 1 can of Hunts Fire roasted Tomatoes 1 cup of sliced roasted peppers or frozen mixed peppers 1 can of olives 1 tsp basil 1/2 tsp pepper 2 TB chopped garlic Preheat oven 350' Press the tofu for an hour to remove excess liquid Cook pasta as directed on box Blend the tofu in a blender or with a hand mixture until smooth. Mix in garlic powder and salt and crush the basil leaves. Add the corn starch Also add the pulverized cashews if you like to make a little richer. Drain the olives and slice each olive in half. Add the pasta to the spinach, tomatoes,olives, and peppers. Add remaining seasonings and toss well. Grease a lasagna pan. Mix the pasta and tofu mixture and spread in the pan.
