4 large fresh tomatoes (preferably local)

4 Tbs olive oil

Pepper to taste

10 oz. mozzarella cheese

8 fresh basil leaves, torn into strips

 

Cut tomatoes into fourths, and then into thin slices. Arrange tomato slices onto

four plates. Spoon 1 tbs olive oil over tomatoes on each plate. Sprinkle with

pepper. Lay medium slices of mozzarella over tomatoes and garnish with fresh

basil leaves. Cover plates with plastic wrap and refrigerate for thirty minutes.
