I used the Libby's Pumpkin Pie recipe and subbed Silk Soy Creamer for the evaporated milk. I used only 8 oz instead of 15 oz of the evaporated milk called for and it came out perfect. I usually have problems with the pies falling a little when I take them out of the oven, but not this time. The pie came out very fluffy. I'll definitely make this again! Michelle in VA I make this very pie with Silk creamer. It comes out even better than the canned milk. I have to cook for myself with milk allergies, my sister and nephew are vegans and we don't tell the others and they love the pie.
