Unfortunately the new garden has no bananas so i need to plant one (or two). I much prefer the banana leaves over the corn husks. I do not think I can get banana fruits here, but to me they are worth it just for the leaves. We grew blue hopi corn and I grew it specifically to use to make tamales. I did not care for the tamale dough made with it. However, we also made corn bread after drying and grinding the blue corn and that was outstanding. I will plant it again just for corn bread (and maybe grits?). I would still like to find a corn for tamales. I am trying Hickory king and a red flint corn this year. I'll post the masa (dough) recipe I came up after some experimenting, and before I was doing crazy things like growing my own corn.
