My name is Judy and my husband Skip and I are retiring from Cleveland, OH to Cape Coral, FL this fall and I am really looking forward to dragging out all those cookbooks I have been saving all these years and experimenting with my cooking.? I am especially interested in learning how to cook more vegetarian meals. My favorite meatless recipe is a sauce that you make and pour over sliced avocados.? Hope you like it! Avocado Dressing 2 Tlbsp sugar 1 tsp salt 1/2 tsp Paprika 1/2 tsp Oregano pepper to taste 1 clove garlic 1/4 c. chopped onion 1/4 c. catsup 1./2 c. oil 1/2 c. white vinegar Mix all in blender, pour over fresh sliced avocados. Note:? you can also use one of those " boat anchors " as Emeril calls them, the hand held stick blenders that come with their own jar. This is also a fun recipe: Roasted Sweet Potatoes and Onions Peel and cut up 4 or 5 sweet potatoes into cubes.? Cut up two large onions into wedges. Sprinkle both with olive oil in a baking pan.
