Guest guest Posted May 25, 2009 Report Share Posted May 25, 2009 Crockpot Potato Quorn Spinach Soup 4 medium potatoes, diced 1 onion, chopped 4 cups broth 1 teaspoon dry mustard 1/2 teaspoon salt pepper to taste 1 10 oz. package frozen spinach, thawed and squeezed dry ! cup diced Quorn left over roast 1 cup shredded Swiss cheese, optional Combine first 6 ingredients in crockpot. Cover and cook on low 7 to 8 hours, until potatoes are tender. Add spinach and diced Quorn and continue cooking on high for 15 to 20 minutes. Serve with shredded cheese sprinkled on top, if desired.
