I also do not use either " regular " or dry milk or " vegetable shortening " or margarine. Is there any home-made baking mix (Bisquick copycat) that does NOT use these ingredients? Can I use regular vegetable OIL or (maybe unsalted) butter instead? Would the liquid oil change the texture? Would unsalted butter make it go rancid too quickly? I would try the powdered milk if I could find organic powdered milk--that's pretty scarce in this part of the country! Thanks for any suggestions! I like this group because someone somewhere usually knows the answers to questions like these! {{{hugs to all!}}}, --Laura B., in Illinois Impossible greek spinach pie Posted by: " stefandtrinity " stefandtrinity stefandtrinity Wed Apr 22, 2009 5:42 pm ((PDT)) Impossible Greek Spinach Pie Source: Annie's Recipe Kitchen 1/2 c. green onions, sliced 1 clove garlic, finely chopped 1 tbsp. butter or margarine 1 (10 oz.) pkg. frozen chopped spinach, drained and thawed 1/2 c. creamed cottage cheese 1 c. milk 1/2 c. Bisquick baking mix 3 eggs 1 tsp. lemon juice 1/4 tsp. pepper 3 tbsp. grated Parmesan cheese 1/4 tsp. ground nutmeg 2 tbsp. feta cheese Grease a 9 x 1 1/4 inch pie plate. Cook and stir onions and garlic in butter in a 10 inch skillet until onions are transparent (2-3 minutes). Stir in spinach. Layer spinach mixture and cottage cheese in pie plate. Beat milk, eggs, Bisquick and lemon juice and pepper until smooth (15 seconds in a blender or 1 minute with hand beater). Pour over spinach/cottage cheese mixture. Sprinkle with feta cheese, Parmesan cheese and nutmeg. Bake 35-40 minutes at 350 degrees or until knife inserted comes out clean. Garnish with ripe olives, if desired.
