Guest guest Posted March 30, 2009 Report Share Posted March 30, 2009 String Beans Pesto Slaw with Sesame Seeds 1 pound string beans or French beans, tipped spoonful or two of pesto, homemade or store bought salt 4 carrots, cut into matchsticks 2 tablespoons toasted sesame seeds 2 tablespoons white wine vinegar 1/3 to 1/2 cup extra-virgin olive oil 1 tablespoon toasted sesame seeds oil (optional) freshly grouned black pepper 4 scallions, thinly sliced Make the string beans: Steam until tender crucnhy, cool and toss with pesto. Mix with the carrots in a bowl. In a an 8 " skillet, toast the sesame seeds over medium heat for 3 minutes, stirring. In a small bowl, whisk together the vinegar, olive oil, sesame oil, salt, pepper, scallions, and sesame seeds. Pour over the string beans and carrots in a bowl; serve within 30 minutes. Serves 6.
