Guest guest Posted May 25, 2009 Report Share Posted May 25, 2009 Savoy cabbage with beans and potatoes These ingrediants are approximate as my grandmother never measured so adjust to the amount you want. This isnt a soup so it should not be thin but thicker like a stew. 1/2 medium savoy cabbage 1 med. onion cut up 2 cans of cannelli beans 2 0r 3 medium potatoes cut up (these are optional I like to use then as it adds some thickness my sister doesnt) 1 or 2 tablespoons oil (veg. or canola) salt and pepper to taste Optional- crushed red pepper or cayenne pepper. (added at the end) cook potatoes in water until just tender.Then set aside (These will be added at the end.) save water In separate pan add oil and cook onions until translucent. Add cannelli beans including liquid in cans cook for about ten minutes over med low heat. Add shredded cabbage and enough potato water to cook the cabbage. Cook until cabbage is tender.if you need more water add but a bit at a time.(you dont want it to soupy) when cabbage is tender add potatoes and cook another 10 minutes or so enough to reheat potatoes If you want heat add some crushed red pepper or cayenne pepper. top each bowl with a drizzle of olive oil. serve with a chuck of hard crusty bread.
