Cherry pies! Then you can freeze the pies, or you can freeze the cherries

individually to cook down for pies or cheesecake topping or whatever later.

I've always used canned tart cherries for pie filling, but Grandma was

talking the other day about using fresh ones and you cook them down like you

cook down any other kind of fruit, with about 3/4 c sugar to about 1 1/2

cups cherries (I always add a little almond extract, and if you want, red

food color). Then thicken with cornstarch and use as pie filling. Have fun!

Pit and freeze the cherries and then use in smoothies. Those tart cherries

provide natural anti-inflamatory for the body. It helps with the pain level

for arthritis too. You were given a real treasure!

Sour Cherries

 

 

 

 

 

I was blessed with a huge basket of sour cherries yesterday. It was payment

for some work that I did for one of my elderly neighbors so I had to take them,

but I have no idea what to do with them.

 

They are very soft bodied and small but very tasty. Any ideas on preserving

them or favorite ways to enjoy them? I've been handing off quart bags of them

today and it doesn't look like I have made a dent. I'm afraid they'll spoil and

I don't want to waste them.

 

As usual, any help is appreciated.

I second Audrey's suggestion of cooking some of them down--I love to add

some heat (cayenne and/or ginger) and/or citrus rind to fruit and use it

to top sweet potatoes. Or without the spice to mix with yogurt or serve

as a dessert topping. (There's an amazingly good and very easy

chocolate cherry vegan ice cream in the files that would be

out-of-this-world with a warm sour cherry topping.) I've also been

wanting to try veganizing this recipe for nearly a year:

I've lost that used sour cherries and didn't include cardamom or

hazelnuts. Lol, now that I've reminded myself, I think I have to make

I also use pitted sour cherries to make pies. I add cinnamon & sugar, but they

are the original sweet/tart flavor that you want in a cherry pie. I just moved

into a new house and need to plant two montmorency cherry trees that will

produce those wonderful cherries. Cherry pie is my husband's favorite. Instead

of birthday cake, he always wants birthday cherry pie.

Here is how to freeze them and yes you can freeze them with the pits if you want

to. you'll just have thaw them before you remove them. I love using frozen

pits in? Time is not on my side to pit all I have before they would e

When I was growing up in Pennsylvania, these were prized and referred to as pie

cherries. Can them in pints and use a jar per pie. You can also make a kind of

dessert with dumplings. Sorry, I don't have a recipe for that.
