Guest guest Posted May 11, 2009 Report Share Posted May 11, 2009 I do like parsnips, but it's an acquired taste, since the vegetable is less readily available than say, carrots or broccoli, IMHO. My parents briefly introduced me and my siblings to parsnips, but I don' remember having them too often. I like them cut into slivers (match-sticks?) and steamed or stir-fried with lots of other vegetables. They tend to be expensive to buy, so I like to spread them out with things like carrots, pieces of broccoli or sweet potato mixed in. Mom and Dad stick to their standard way of " cooking " parsnips--pan-sautee them in some butter (or margarine) and then slathering them with brown sugar for a " glaze " . I personally think this covers up the nice, sweet light flavor or the parsnip--when steamed or stir-fried, the delicate sweetness is pleasant, but not strong. (Leaving them semi-raw or " crisp-tender " seems to allow them to stay tough and the flavor reminds me of really OLD and bitter carrots!) My DH also " hates " parsnips, but I have diced them into VERY small pieces and tossed them into vegetable soups many times in the past couple of years--and he's not said a word. I don't think he's even actually NOTICED when I've had parsnips in his food. I also have put the " match-stick " cut parsnips in with (similarly cut) carrots and greens and onions--in my " steamed batch of veggies " . DH has eaten those and seems to like the " batch of veggies " idea. I think he guesses that it is one of those " different colored carrots " --and doesn't question whether it's a carrot or a parsnip. He barely knows what a parsnip is, anyway--so I just let him try it and if he likes it, it's my little secret for the time being! Peace!
