Guest guest Posted February 16, 2009 Report Share Posted February 16, 2009 ~*~*~ Strawberry Stuffed French Toast ~*~*~ Serves about 6 12 slices bread of your choice 1/2 cup cream cheese, softened 1/2 cup strawberry fruit spread 1/2 cup sliced strawberries 2 large eggs 1/2 cup milk 1 teaspoon vanilla extract 1 tablespoon butter 2 tablespoons powdered sugar 1/2 cup maple syrup On top of 6 slices of bread, place a generous teaspoon of cream cheese, a generous teaspoon of fruit spread, and 4 strawberry slices. Top each with another slice of the remaining bread. In a medium mixing bowl, stir together eggs, milk, and vanilla. Dip bread into egg mixture, being careful not to let strawberries fall out. Press edges together to seal. Heat skillet to medium and melt butter. Cook 2 or 3 minutes or until the first side is golden brown. Use a spatula to turn sandwich over, and cook until second side is golden brown. Sprinkle with powdered sugar. Serve immediately with maple syrup.
