**How much is a lot? How much penne is used in the recipe? A kilo or so?

Looks like a great recipe. My 8-yr old likes trying different versions of

pasta, like penne, so it's always good to sneak some veggies into the penne.

Slow-raosting the peppers seems to bring out the flavour more, so I'll try a

slight variation....

We usually make a one-pound box of penne, which is a lot for the two of us. It

is good because I'm not a big fan of tomato-based sauce, so the olive oil is a

nice break from traditional spaghetti sauce. Also pretty with all the different

colors! :-) How do you slow-roast the peppers? I like cutting back on the oil as

much as I can, so if that doesn't involve oil, I'm interested.
