How much penne is used in the recipe? A kilo or so? 2lb bag? Looks like a great recipe. My 8-yr old likes trying different versions of pasta, like penne, so it's always good to sneak some veggies into the penne. It is good because I'm not a big fan of tomato-based sauce, so the olive oil is a nice break from traditional spaghetti sauce. Also pretty with all the different colors! :-) How do you slow-roast the peppers?
