This is a delicious and colorful sald that makes a great presentation.

Marinated Chickpea Salad

 

1 16 oz. can Chickpeas/Garbanzos(drained and rinsed)

1 16 oz. can corn kernels, drained

1 tomato, diced

1/3 c. red onion, chopped

1 carrot, shredded

2 stalks. celery, finely chopped

1/2 c. cilantro, chopped

3 T. vinegar or lemon juice

1 garlic clove, minced

1/2 tsp. dry mustard

1/2 tsp. salt

1/4 tsp. sugar

1/4 tsp. paprika

 

 

In a large bowl, combine the chickpeas, corn, onion, carrot, celery and

cilantro.

 

In a small bowl, stir together the oil, vinegar/lemon juice, garlic, mustard,

salt and paprika. Pour the dressing over the salad and toss until combined.

Let stand at least 1 hour before serving.
