Guest guest
Oh this looks GOOOOOOD! ~Tee - thea_swafford Friday, April 17, 2009 12:59 PM Fw: [friendsareforever123] My latest recipe from the test kitchen. These are too good to be good for you. Yogurt Coco Muffins These rich delicious, brownie-like muffins are too good to eat for breakfast. They are low-fat, and heart smart.... what more could you ask of a muffin? Ingredients 3/4 cup Brown sugar (or 1/2 cup brown sugar Splenda) 1/2 cup Apple sauce 1 cup Vanilla yogurt 1 Egg 1 1/2 tsp Almond extract 1 3/4 cup Whole wheat flour 1/3 cup Cocoa 1/2 tsp. Salt 1 1/2 tsp Baking powder 1 cup Chopped nuts Preparation Combine brown sugar and apple sauce. Add yogurt, egg and almond extract, stirring mixture until thoroughly blended. In a larger bowl, combine flour, cocoa, salt and baking powder. Add yogurt mixture to dry ingredients, stirring only until mixutre is slightly moistened. Fold in chopped nuts. Spoon batter into greased muffin tins and bake at 350 degrees for 25 minutes. Makes 12 large muffins. Cook's Notes 1 cup raisens or chocolate chips can be added to dry ingredients for variety. We like them served warm, split with a large scoop of frozen yogurt on top.
Guest guest
Yes, the yogurt in the recipe is replacing butter milk in the original recipe, so you are replacing liquid with liquid.
