Lol, I definitely had a queasy moment there. I think I might try making

them into circles or something else less cutletty next time :) They

taste like seiten, which doesn't taste meaty to me, but I know it does

to others, so I'm not sure if I'm a great judge. The cutlets are thin,

chewy, and taste more like the herbs and paprika than the other

ingredients.

 

You've probably been through this already, but could vital wheat gluten

be available near you by another name? According to foodsubs.com, it's

also called gluten flour, instant gluten flour, and pure gluten flour.

I don't remember what I bought the vital wheat gluten for, but I've seen

it in bread and (quick) seiten recipes. I'd be happy to send you some to

try if you want :)
