Has it been determined what causes the gluten sensitivity? How much Seitan should I eat (watching the protein in the diet of course). Guest guest Posted July 10, 2009 Report Share Posted July 10, 2009 Follow the protein guide on the Food chart. We eat it about once a day and have for my whole life. Gluten/Seitan is a great product. Both the vegetarian Quorn Chicken-Style Tenders and Turkey-Style Roast are free from added gluten for those with Gluten sensitivities. Also making lentil, Oats, nut or bean patties are good options.
