I'll have to try this. I've got left over cooked brown basmati rice from lunch.

Thanks for sharing this. I just need to get some wheat germ. Used all of mine

up last week.

Vegetarian Rice Nut Loaf recipe

 

 

I always get rave reviews when I make this! I hope you will like it too!

 

Preheat oven to 350 degrees.

 

Ingredients:

 

1 1/2 c. cooked brown rice

1/2 c. wheat germ

3/4 c. chopped walnuts

1/4 c. sunflower seeds

1 onion, chopped

1/2 lb.(2 c.) shredded sharp cheddar cheese

1/2 tsp. salt and pepper to taste

4 lightly beaten eggs

 

Combine all ingredients and pack into a well oiled 9 " loaf pan (or

other metal pan if you don't have a loaf pan). Bake for about 45-50

minutes until firm. Let cool in pan for 10 minutes, then unmold and

I haven't tried using any other nuts besides walnuts with this recipe, but I

don't see why not.

It's not my recipe but I would think almonds would be a good sub.  pecans are

sweet and peanuts overpower.

I substitute pecans for walnuts in a lot of recipes.

I use pecan in savory dishes all the time and in patties. I love them and

don't taste any sweet in it. Funny how we all taste differently isn't it.
