rinsing the beans gets rid of the indigestible sugars that cause gas.

Why does washing beans make them less flatulent? I usually rinse beans, but

I'll really wash them in a pot of water and swish them around good and do it

I did a little research and found this which supports what you said - rinsing is

how you can eliminate the gas which can be very troublesome... Thank you

 

Intestinal gas. All legumes (beans and peas) contain raffinose and stachyose,

complex sugars that human beings cannot digest. The sugars sit in the gut and

are fermented by intestinal bacteria which then produce gas that distends the

intestines and makes us uncomfortable. You can lessen this effect by covering

the beans with water, bringing them to a boil for three to five minutes, and

then setting them aside to soak for four to six hours so that the indigestible

sugars leach out in the soaking water, which can be discarded. Alternatively,

you may soak the beans for four hours in 9 cups of water for every cup of beans,

discard the soaking water, and add new water as your recipe directs. Then cook

the beans; drain them before serving.

This technique of using 9 cups of water for every one cup of beans for

soaking, then adding fresh water is the way I have cooked dried beans for

many years. I think I read this technique in " Laurel's Kitchen " years ago and

it

works very well.

 

There is one particular kind of dried bean that seems to be without as much of

the

complex sugar that causes people to have gas from eating beans as other dried

beans. They are called

Anasazi beans and are grown in the southwestern areas of the United States.

If you like pinto beans, you would probably love Anasazi beans as they are very

similar in taste except they are much quicker cooking, and are just slightly

sweeter AND

I can honestly say, even without the larger amount of water cooking technique,

they do

not give my family gas....and that is a wonderful thing at our house. I highly

recommend them.

 

We first got some, a 10 lb. bag, at Dove Creek Milling Company out of Cortez,

Colorado in 1995

when were were in the Four Corners area. I have continued to buy them over the

years and are

actually my favorite kind of all-purpose bean. Here is what I found on the

internet about them.

Anasazi beansbeansbeans are small kidney shaped purple and white beansbeansbeans

in the same family as pinto beans. They can be used in Latin American and

Southwestern cuisines, and have a mild, sweet flavor which pairs with a mealy

texture. AnasaziAnasaziAnasazi beansbeansbeans cook much more quickly than

regular beansbeansbeans, and they appear to have been a part of the human diet

in the Americas for thousands of years. The beansbeansbeans are also marketed as

New Mexico cave beansbeansbeans, Aztec beansbeansbeans, New Mexico appaloosas,

and Jacob's Cattle beansbeansbeans.
