I'm a struggling vegan, went cold turkey to start, but it's been tough (I love dairy!). I also to try to limit my soy intake which reduces my options. As for my own recipes, I usually just get an idea and start adding things that I think will taste good together. Sometimes they turn out great, other times... not so great ;-( I don't really write down any formal recipes, but I will try to remember what I used for the ones that turn out well. I do always try to make complete proteins by having beans or nuts and grains like rice, pasta, barley, amaranth, etc. And then, of course, a plethora of veggies! :-D It's been really wonderful finding new foods AND new spices to incorporate into my diet.
