Freezing zucchini -- watch the amount

I've been looking forever and can't find the original posts but

I'm pretty sure it was in this group that someone mentioned they freeze shredded

zucchini in 2 cup amounts so they can make zucchini bread all winter long.

 

I just wanted to tell that person that I used some frozen zucchini yesterday and

it turned out, because of the amount of water the frozen zucchini sheds, 2-1/4

cups of zucchini turned out to be slightly less than 1 cup when it was pressed

and ready to go into the bread recipe.

 

Hope that helps and you won't be taken by surprise in December.
