Guest guest Posted July 21, 2009 Report Share Posted July 21, 2009 I've been looking forever and can't find the original posts but I'm pretty sure it was in this group that someone mentioned they freeze shredded zucchini in 2 cup amounts so they can make zucchini bread all winter long. I just wanted to tell that person that I used some frozen zucchini yesterday and it turned out, because of the amount of water the frozen zucchini sheds, 2-1/4 cups of zucchini turned out to be slightly less than 1 cup when it was pressed and ready to go into the bread recipe.
