Guest guest Posted August 6, 2009 Report Share Posted August 6, 2009 I have a couple:) For a Dipping Sauce: put 5 tablespoons of natural peanut butter (I use Laura Scudders - has only peanuts and salt in it, no wierd oils or anything) in a blender. Add a couple dashes of soy sauce and sesame oil, ginger powder, cumin, curry powder, garlic powder, salt & pepper, add a little water and blend. For a Thai Sauce for noodles: Do the same as above but in a saucepan and add a can of coconut milk, chopped mint leaves, finely chopped peanuts and add some more curry, taste and see if you might want to add a touch of brown sugar. Note: If you happen to come across a banana flower it is a great natural thickener for this sauce as well. To prepare, get a medium bowl and fill it 1/2 way with water and squeeze a lime or lemon in it (as soon as you slice the flower it does oxidize and turns brown quickly, the lemon water stops that). Peel the leaves and slice flower thinly (it is sticky) and soak in water for about 10 minutes. Brown in hot pan with a little oil (do not thoroughly cook) then add to the sauce above. It will thicken your sauce and add a some sweetness and a very light onion flavor due to the quick browning from before.
