July 4th plans?

We are going to grill porti mushrooms and tofu pups. Have potato salad, Italian

pasta salad, watermelon , fruit tea and more.

I hope everyone has a nice safe holiday.

I got some Morningstar burgers and some rolls early in the week, in

case DH wanted to go to a friend's house for the 4th so we'd be sure

to have something to eat. (At DD's wedding, she and her groom made

sure to have veggie burgers, but had to fend off the carnivores until

we had gotten some!) However, we've decided to stay home, so I'm

going to grill those burgers here, and maybe a couple of garlic

scapes that followed me home from co-op pickup. I bit the end of one

before it got into the house and it tasted like onion grass, which I

ate as a child.

 

DH went to the store with me yesterday to pick up beer and sherry and

lettuce and other odds and ends, and asked for onion dip and chips,

and even made up the onion dip once I pulled the ingredients

together, so I guess that will be my guilty pleasure.

 

There is still a handful of strawberries lurking, and maybe the

piggers will let me have some salad without complaining that I'm

stealing from them, if I don't fill up on onion dip first. ;-)

Sounds like everybody is going to eat well!

 

I'm going over to Mom's, she and Grandma and I are going to have taco salad

(not traditional, but easy!) Easy for me, too -- I'm bringing my

newly-discovered favorite, TVP seasoned with a veggie " beef " bouillon cube

and Penzey's taco seasoning (which is much better than the stuff I had been

using). Mom is making some kind of coconut pie (not the coconut cream pie

I'm used to) so that will be interesting -- I'll report back on that!
